What Gives Everett & Jones BBQ Its Delicious Taste?
Our homemade beef links are hung across the top of the vertical built brick pit with pork ribs and beef briskets placed below the links.
The fire is about 3 feet from the pork ribs and beef briskets and about 5 feet from the links. When the fat from the beef links start dripping down onto the meat below the drippings coat and marinate the meat. With each hand turn of the pork ribs and beef briskets the drippings slide off the meat and fall onto the oak wood fire below; creating pockets of flames that shoot up like solar flares kissing the meat.
Over the next 4 hours a delicate dance begins the skilled pitmaster takes a cup of fresh clear water from a 5 gallons bucket that sits on the floor by the pit and douses the flames. The smoke created by the water releases the seasoning stored hidden inside the walls of the brick pit; sending up smoke with layers of flavor mixed with the beef links’ drippings.
The smoke surrounds all the meat cooking inside the pit. This smokin’ process infuses the meat with our unique and delicious flavor; afterwards the smoke travels up the brick chimney sending irresistible smoke signals throughout the neighborhood.

How To Make Beef Links
Take 100 lbs. of all-beef trim (beef trimmed by the butcher or you) and dump it into the meat chopper. Place the meat blade for a coarse grind onto the chopper and send the beef trim through the chopper. Now lovingly hand season the now coarsely ground beef with your special blend of spices. Take the beef and carefully return it to the meat chopper, season it again, then put the stainless steel horn on the meat chopper. Place a container below the horn to catch the finished links. The casings which have been washed, rinsed and soaking in clear water are hand pushed onto the horn next. With one hand pushing the seasoned beef down the opening and the other hand holding the casings in place guide the long ropes of beef links spitting out of the chopper at a fast pace. into the container placed below the horn. When the container is full place it in the refrigerator until needed.
